TANDOORI CHICKEN NUGGETS

Ingredients

1 cup chicken mince
3 tbsps tandoori masala powder
1 ½ tbsps ginger-garlic paste
1 tsp red chilli powder
½ tsp garam masala powder
½ tsp dried fenugreek leaves ( kasuri methi) powder
1 tbsp lemon juice
Salt to taste
A piece of coal
½ tsp ghee
1 cup panko breadcrumbs
2 eggs
Crushed black peppercorns to taste
Oil for deep frying
Green chutney for serving

Method

1. Take a grinder jar. Add chicken mince and grind to fine paste.
2. Transfer in a bowl. Add 2 tbsps tandoori masala powder, ginger-garlic paste, red chilli powder, garam masala powder, kasuri methi powder, lemon juice and salt and mix well.
3. Heat a piece of coal on direct heat. Place a steel bowl in the center of chicken mixture. Place the piece of coal, add ghee and cover immediately with a lid. Set aside for a minute.
4. Spread the panko breadcrumbs on a plate. Add salt and remaining tandoori masala powder and mix well.
5. Break eggs in a bowl. Add salt, crushed black peppercorns and beat well.
6. Heat sufficient oil in a kadai. Grease your palms with oil, divide the chicken mixture into equal portions and roll into balls. Flatten each ball.
7. Dip in beaten eggs and roll in breadcrumb mixture.
8. Slide the nuggets in hot oil and deep fry till golden brown and crisp.
9. Drain on absorbent paper and serve hot with green chutney.
