I would like to give you my mom's thai yellow curry>>> she stir-fries the curry and then she adds ground black pepper. She uses thai eggplants(sometimes uses aubergines) and pea eggplants and adds sweet basil leaves, kaffir lime leaves and fish sauce to season thai curry. For meat, you also can use chicken, shrimp, pork or even beef. Please try ^^
