Thai Style Steamed Fish W/ Lime Sauce & garlic
Ingredients:
650g – 1 whole (sea bass, red snapper, barramundi fish), cleaned
1-2 stalks lemongrass, bashed
Pinch of salt

Chop ingredients:
5 garlic, chopped
3 bird’s eye chillies
3 sprigs of coriander, cut out the leaves for garnish and stalk for the sauce 2 fresh chilli

Sauce ingredients:
3 tbsp fish sauce
3 tosp lime juice
1/3 cup water or chicken broth
3 tbsp palm sugar

Method:
Stuff the lemongrass into the fish.
Steam over high heat for 8 minutes. (Depending on the size of the fish)
Mix together the sauce and chopped ingredients.
Mix till the sugar is dissolved. Set aside
Remove the fish from the heat and discard the water.
Pour the sauce mixture over the fish, and place 4 lime slices on top of the fish.
Steam over high heat for 5 minutes. Garnish with the coriander leaves. Serve immediately.
