Thanks to @OTRontheroad for the videos – the one below is where i learnt about this dish.
Thai White Curry (Gaaeng Khaao)
Ingredients:
– 2 shallots, chopped
– 3 cloves garlic, minced
– 1 tbsp fresh ginger, minced
– 1 tsp fresh turmeric (or 1/2 tsp ground turmeric)
– 2-3 Thai bird’s eye chilies, sliced (optional)
– 2 coriander roots (or stems), cleaned
– 2 tbsp peanut oil
– 1 tsp ground coriander
– 1 tsp ground cumin
– 1 can (400ml) coconut milk
– 1 cup chicken or vegetable stock
– 1 tbsp fish sauce (or soy sauce for vegan option)
– 1 tbsp palm sugar (or brown sugar)
– 500g chicken breast or tofu, cut into bite-size pieces
– 1 cup bamboo shoots
– 1 red bell pepper, sliced
– juice of 1 lime (plus extra wedges for garnish)
– fresh Thai basil, for garnish
Method:
1. In a mortar and pestle, pound the shallots, garlic, ginger, turmeric, coriander roots, and chilies (if using) into a paste. For smoother texture, pound longer.
2. In a dry pan, toast the coriander and cumin seeds until fragrant (2–3 minutes). Grind them into a fine powder.
3. Heat peanut oil in a large saucepan over medium heat. Add the curry paste and fry for 4–5 minutes until fragrant. Stir in the ground spices and cook for an additional minute.
4. Add one-third of the coconut milk to the pan and cook for 3–4 minutes, stirring constantly. Add the chicken and coat it in the paste.
5. Pour in the remaining coconut milk, stock, fish sauce, and palm sugar. Simmer over medium heat for 10 minutes.
6. Stir in the bell pepper, bamboo shoots, and lime juice. Simmer for 5–6 minutes until vegetables are tender.
7. Taste and adjust with additional sugar, fish sauce, or lime juice, as needed.
8. Serve hot over rice, garnished with fresh Thai basil and lime wedges.

Pretty sure that’s soup. Not curry. Tom kha to be exact. ต้มค่ะ not as good as ต้มยำ imo. I’m not Thai but I lived there for a long time. I speak read write and eat Thai daily…. But I could be wrong 🤷♂️ maybe white curry exists? Never heard of it once
i had white curry at a japanese chain restaurant, so i guess it could be a japanese dish. a quick google search shows me that its a speciality from Hokkaido

People mistake this dish for Tom Kha all the time because its mostly popular in 1 province in Thailand called Ayutthaya. Pretty rare to find. There are probably 60 different curry varieties all over Thailand.

I've only ever found it at a local restaurant near me run by a Thai immigrant family and I actually prefer it the other types
I've never ever heard anyone describe galangal as subtle 😂 this sounds great tho
I love yellow curry but i live on an island and none of the thai restaurants seem to do it😢
i harbor an above average hatred towards Thailand, but one thing is do respect is their ability to create amazing food

Had it because I had a friend growing up who was a quarter Thai and her grandma lived there and she would cook for us when we hung out. She made this the first time I went over because it is not spicy and she didn’t know what my spice tolerance was. It was thinner than some other curries I have had but she did thicken it with a mix of sweetened condensed and evaporated milk. It was delicious, but when I then put sriracha on it like my friend did she started making hotter curries when I came over. I miss her, she would still make white curry and send it to school with my friend if I was sick to give to my sibling to take to me which was a godsend (I am celiac, which I found out late in life and also mixed race, and was used to the food of my cultures which both have very spice heavy cuisine so I was never a chicken soup and saltines kid) I wish I knew how to make it now but every time I try it is not the same
had this in sydney, a place down at glebe point across from the yha, it blew my face off it was that hot, definitely hotter than a vinda or a phaal

White Curry Recipe
– Shallots: 3 bulbs
– Thai garlic: 8 cloves
– Lemongrass: ½ stalk
– Galangal: 5 slices
– Kaffir lime zest: 1 teaspoon
– White peppercorns: 1 teaspoon
– Sea salt: ½ teaspoon
– Coconut milk: 600 milliliters
– Sun-dried pork: 150 grams
– Pickled bamboo shoots: 200 grams
– Fish sauce: 2 teaspoons
– Palm sugar: 20 grams
– Kaffir lime leaves (torn): 3 leaves
1. Pound the shallots, Thai garlic, lemongrass, galangal, kaffir lime zest, white peppercorns, and sea salt into a fine paste.
2. Heat the coconut milk in a pot. Add the pounded spice mixture and simmer until aromatic.
3. Add the sun-dried pork, followed by the pickled bamboo shoots. Simmer until the bamboo's flavor infuses and the pork becomes tender.
4. Season with fish sauce and palm sugar to taste.
5. Just before removing from heat, add the torn kaffir lime leaves.

My grandparents friends who were Thai would make me and my siblings white curry when they babysat us. It had mushrooms, bamboo and either chicken or tofu in it besides the usual herbs and spices :3 Good stuff
