Recipe:
Lemon Keto Cheesecake Pie Dessert Thing:
Make the crust first.
Start off with a cup of chopped pecans.
Melt two tablespoons of butter until it’s nice and smooth.
Add a teaspoon of Magic Baker’s Granulated:
Use a mini chopper to chop those pecans. Quick and easy!
Mix in the melted butter and Swerve until everything’s well combined.
Press the pecan mixture into whatever you want to serve it in. I use a 3″ x 6″ x 7.5″ glass container.
Bake at 375 degrees for about 10 minutes,or until golden brown, then let it cool completely.
Now for the Lemon Pie Filling:
In your favorite yellow mixing bowl, whip up 1 1/2 cups of heavy whipping cream until it forms stiff peaks.
Add 8 ounces of softened cream cheese, 2/3 cup of Magic Baker’s Confectioners, and a teaspoon to a teaspoon and a half of vanilla. Mix until smooth.
Pour in 1/2 cup of fresh lemon juice, or less. Taste as you go!
Stir in a tablespoon of lemon zest for that extra flavor kick. Taste it !
Pour the filling into your pecan crust and pop it in the freezer for 1 to 2 hours and then thaw completely before serving.

I know its sacrilegious to a Southerner and your finished dessert looks amazing but I don't like pecans. Have you tried it with almonds or other nuts? BTW, I noticed that you use the same measuring cup for dry and liquid ingredients. Do you know that liquid ingredients measure differently than dry? I was taught to use different measures for each. Just a suggestion. All that aside, love how you describe everything you do. Beaver butt lol

I would suggest mixing in a glass or porcelain bowl as you could get plastic bits from the scraping of the mixer on the plastic bowl

Suggest something softer or smoother. Background. Not in your face. Seriously, the volume was just too loud to concentrate on the ingredients and measurements. My 17 year old neighbor was kind enuf to sit through your video and write everything down while I sat outside in the porch. She even typed it up, step by step. She really loved the lemony dessert too! 😋👍🏻

You're using a dry measuring cup to measure your liquid cream. Dry measuring cups don't measure the same as a liquid cup. Check it out.

Oh gosh. I'm so glad I found this again
I made this yesterday. It turned out really good. I ended up throwing it back into the freezer though because it was not set up, even after the first 2 hours in the freezer. So I left it in the freezer overnight. When I was mixing everything up and tasting it, I was thinking maybe I should have doubled the cream cheese, but I wanted to try it the way you made it first. 🙂 I make a Keto Chow Cheesecake fluff that uses a little less heavy whip with the block of cream cheese and I really love the consistancy of that so maybe next time I will use slightly less heavy whip or double the cream cheese. I love that it is so easy to make and easily customizable so we can adjust things for our preference. Great recipes. Have an amazing day. 💜
