To much meat. Way i do it is? When there deboned 🦴🦴 I cut it into finger ribs. about 2 per rib, Thats what is use. on my subs, about 3 finger ribs 🍖🍖🍖> Not a whole slab 🙄🙄 I like to eat it. NOT WEAR IT

While this looks fantastic, it also looks like too much per bite to me. I think slicing the ribs into 2-3 boneless rib portions would be preferable. I get why you did it this way though as you're trying to emulate the look of the McRib.
You have perfected all of the elements of "Kolache" . Bake in pellet grill?. sausage, or pulled pork, test to see if cheese is best with hi temp or american, or cheddar. any size, and any sausage. Fix and freeze?. Might be better than any bakery.

If you want your cuts deeper in your bread dough, spray the razor with a bit of non-stick spray.
