The Best Apple Pie With Claire Saffitz | Dessert Person
I love an elaborate dessert on occasion, but after lots of trial and error, I’ve learned over time that when it comes to apple pie, simplest is always preferable. For Thanksgiving, what I want underneath a scoop of vanilla ice cream is a slice of buttery, cinnamony pie that tastes of apples and features a variety of textures. This pie, with an oat crumble topping rather than a top crust of lattice, checks all of those boxes.

Classic Apple Crumble Pie
Serves 8
Ingredients:
For the Crumble:
1 cup all-purpose flour
1 cup old-fashioned rolled oats (not quick cooking)
⅓ cup packed light brown sugar (2.3 oz / 65g)
1 teaspoon ground cinnamon
½ teaspoon kosher salt
10 tablespoons unsalted butter, cut into ½-inch pieces, chilled
For the Pie:
1 recipe homemade pie dough, chilled (enough for a single-crust pie)
All-purpose flour, for rolling
3 pounds Granny Smith apples, peeled, cored, and sliced into ½-inch-thick wedges
½ cup packed light brown sugar
3 tablespoons cornstarch
2 teaspoons ground cinnamon
2 teaspoon apple cider vinegar
½ teaspoon kosher salt
2 tablespoons unsalted butter, cut into ½-inch pieces, chilled

Regarding apple scraps : when making apple pie, I like to boil them in some water in order to extract as much pectin, sugar and flavour as possible.
Once everything has completely collapsed, I strain and return the liquid to the rinsed out pan and simmer until think and viscous.
I add the liquid to the sliced apples and slightly reduce the amount of corn starch I use.
The filling is more more luscious and silky when I do that, and less stodgy or gloopy.

Get shot of the vinegar. That revolting substance has no place anywhere – but if it did, then it would never be for something sweet. insofar as there is the need to introduce a sour element, then the starch does this for you. I'm from the former Soviet Union and as I grew up, we made delicious apple pie and apple crumble many times with natural local ingredients, and never did any type of vinegar star in a featured role. Believe you me, NOTHING you've tried in the US or the west compares to what we produced in my grandparents' village in western Ukraine!

oh i love crumble toppings for pies. I also sometimes add some toasted seeds to the oat flakes (toasted sunflower seeds, sesame seeds and pumpkin seeds are delicious) and sometimes, if i want to add something more it would be toasted pecans broken in big pieces). a drizzle of maple syrup does also taste nice with apples that's delicious as a crumble topping! I will try your recipe! It looks amazing! thank you =)

I created this pie for the second time for Fourth of July. The first time I did it, I couldn’t taste it because I lost my tastebuds after COVID. This second time, I appreciated all the flavor from the crust, crumble, and apples. It’s the best apple pie I have tasted. Thank you for creating recipes that showcase the fruit and don’t drench it with loads of sugar.
