Chocolate Walnut Banana Bread Recipe:
Ingredients:
✅Wet Ingredients:
3 medium sized bananas, super ripe
150 grams light brown sugar
2 eggs
1 teaspoon vanilla extract
100 grams brown butter (I’ve used 130 grams butter to make the brown butter) but you can use 100 grams melted butter instead
20 grams milk
✅Dry Ingredients:
180 grams all purpose flour
40 grams almond flour / ground blanched almonds
1 teaspoon baking soda
1 teaspoon cinnamon powder
1/4th teaspoon salt
✅Mix-ins:
75 grams chocolate buttons
50 grams walnuts, roughly chopped
1 teaspoon all purpose flour / plain flour
Notes:
1. When making brown butter, always take a little more butter as the water content dramatically reduces as you brown the butter. If you are not using brown butter, you can use 100 grams melted butter instead
2. Preheat oven to 160 Celsius / 320 Fahrenheit. Bake at 160 Celsius / 320 Fahrenheit for 1 hour + 5 minutes (more or less) or until a skewer / knife / toothpick inserted in the centre comes out clean.
3. I have used a 7 inch loaf tin with a 3.5 inch height. Grease the tin well and line one side with parchment paper with plenty of over hang so you can lift the banana bread from the tin easily after it has baked.
