Very simple but super flavorful bucatini pasta with Kalamata olives, capers and Sundried tomatoes. Easy recipe to put together for a quick meal after a long day of work or for a nice intimate dinner 👌. Salty, buttery and rich in flavor while still remaining in the category of light pastas.

Ingredients:

Bucatini, enough for 2 people
¾ cup Kalamata Olives, halved
¼ cup Capers, crushed/whole
¾ cup Sundried tomatoes, sliced
1 Red Chili, sliced
3 Garlic Cloves, sliced
Parsley
Paprika
Extra Virgin Olive oil
½ Lemon juice/zest
Pasta water
A few knobs of butter
1 cup Parmesan Romano Reggiano

In a frying pan with olive oil, sauté olives, chilies, Sundried tomatoes, capers and garlic for a few minutes. Season with a pinch of salt and paprika.
In a pot with salted water, boil pasta to al dente. Save some pasta water.
Add pasta into the frying pan along with pasta water and lemon zest and juice. Simmer and reduce for a minute. Finish with Parmesan, olive oil and a few knobs of butter.
