Stir Fried Clam Recipe
Ingredients:
Serves 3 – 4 pax

10g young ginger (julienned)
2 stalks of spring onion (add the stems first then add the rest of them at the end)
4 cloves of chopped garlic
2 red chilli (julienned)
1 tablespoon black bean paste
0.5 tablespoon oyster sauce
1.5kg clams (you can buy any kind of clams e.g. venus clams or Manila clams)
0.5 teaspoon sugar
2 tablespoons Chinese cooking wine
1 tablespoon premium dark soy sauce
Some cornstarch solution
1 tablespoon sesame oil

I grew up in Hong Kong, and I must say your recipes are EXACTLY what I remember! I was there as a baby/toddler for 2 years then we moved back from 1980 to 1987, graduating from high school at HKIS.
