Those are expensive incubator and cloche. Most of us, although weโre also serious about our,breads, use cheaper โpeasantโ techniques. And my oven is 73 years old, in those days oven doors had no window and the light only turns on when the door is opened, so heat would escape. I warm my microwave until the window sweats using two 2-cup Pyrex measuring cups for boiling water, put them in the back corners of the microwave once the window is warm and sweats, place the covered bowl inside, works well.
That is how my bread is… right out of the oven and then out of the dutch oven, you start hearing the crackling… every other day… I am so spoiling myself! When I am being daring… a few spices is added to the dough… basil.. thyme… rosemary… ๐ปโค
