I prepared this dish exactly as described, although I had to make one substitution. There are no Jerusalem artichokes to be found here in suburban Maryland in the midst of winter, so I used two small sweet potatoes, peeling and dicing them as shown. The result was fantastic; the Apple-balsamic purΓ©e was delicious, and the beer sauce added just the right touch.

Hi chef. May I know the temperature of the oven for the finishing of the pork?
Here's a great tip for cutting corn off the cob. Put a large bowl down and a smaller bowl upside down inside the larger bowl. Cut the corn as shown and it will fall neatly into the bowl.

Chef. Could you share the quantity of ingredients used for the corn puree and for how many people those ingredients are good for. I typically cook for 6 people so I am trying to assess the quantity of ingredients to use.
