  2. I prepared this dish exactly as described, although I had to make one substitution. There are no Jerusalem artichokes to be found here in suburban Maryland in the midst of winter, so I used two small sweet potatoes, peeling and dicing them as shown. The result was fantastic; the Apple-balsamic purée was delicious, and the beer sauce added just the right touch.

  3. Chef. Could you share the quantity of ingredients used for the corn puree and for how many people those ingredients are good for. I typically cook for 6 people so I am trying to assess the quantity of ingredients to use.

  4. Chef. I'm a big fan. Thank you for the wonderful dishes. Could you please explain why the corn puree had no liquid in it once you put it in the blender. Did you leave it boiling until all the liquid evaporated?
