I’ve had problems with olive oil smoking in my oven when I have it this hot. Would an oil with a higher smoke point work? I know the flavor profile will be different.
I don’t understand when people say sugar aids in browning. Isn’t it just the sugar that browns? Adding sugar doesn’t make a food brown faster… like the food itself right?
For those at home who don’t want to/can’t use an oven at such a high setting for this, if you have a stovetop convection oven/air fryer, you can get very similar results at a temp of 350-400 or so. The hot air will cause the browning, as long as you toss the broccoli with oil beforehand. (And this works with frozen broccoli florets too!)
Well I don't doubt it's great… I just take out frozen bag of broccoli florets, toss the frozen broccoli in olive oil, some salt, pepper, chili flakes, and then a 400 degree oven for 20 min. It will come out more roasted then this and can be prepped in a less then 5 min on the baking sheet without needing a bowl.
If you want better browning a brand new sheet pan like the one he used isn’t going to do it. I have a dedicated roasting pan that gets darker with every use as the oils polymerize and it only gets better with use, kind of like a cast iron pan.

I do something similar with my air fryer. They come out great.
Asparagus and broccoli are succulents and should not be cooked in the oven with burnt butter oil and garlic. Destroyed.

Thank you for not wasting the stems. I love them. Fantastically easy and tasty way to eat broccoli.
Just do the same thing but with a pan on the stove with a little water to steam and add honey instead of sugar. Done.
You don’t have to peel the stalks, just take off the leaves and scrape off leftover cutoff branches
