The Best Sausage & Potato Tray Bake You’ll make this week!
This is how you turn a basic sausage-and-potato tray bake into something seriously special.
Today I’m making an elevated one-tray sausage dinner with crispy potatoes, caramelised onions, roasted garlic, green peppers, jammy cherry tomatoes, and a glossy mustard-honey glaze that lifts the whole dish.
It’s cheap, simple, and made entirely on one tray — but the flavour is proper pub-style comfort food.

Ingredients
Main Tray
• Pork sausages (thick): 450 g | about 8 sausages
• Potatoes 900 g cut into wedges
• Onion (large, sliced): 200 g
• Green bell pepper, chunks: 150 g
• Tomatoes (plum or vine, halved): 200 g
• Olive oil (for wedges): 2 tbsp | 30 ml
• Caraway seeds – pinch
• Dried thyme – pinch – oregano (optional)
• Salt: ¾ tsp
• Black pepper: ½ tsp
Mustard Sauce (Mixed in a Bowl)
• English or Dijon mustard: 1 tbsp | 15 g
• Worcestershire sauce: 1 tbsp | 15 ml
• Olive oil: 1 tbsp | 15 ml
• Honey or brown sugar (optional): 1 tsp | 5 g
• Garlic (minced): 1 clove | 1 tsp
• Black pepper: ¼ tsp
Preheat to 200°C / 390°F (fan 180°C / 355°F).

Made this yesterday. I did put the potatoes in a separate dish because I made so many. That honey mustard glaze was outstanding. We had the sausage and onion and peppers as sandwiches with extra mustard. I was thinking the leftover potatoes would be good with green beans and red onion in a salad with a mustardy vinaigrette. If there are any left…sure.

Only just found your channel, love it, as an expat Yorkshireman in sweden I have failed to get my kids talking proper so your channel is great not only for food (and comedy, LOOK AT THATTTT!) but also accent training. Whereabouts are you from, you do have that posh way of saying "onions" which I remember an old girlfriend from Barnsley had (wouldnt call Barnsley posh though, but most things are a step up from the backwaters of Rotherham where I'm from)
