Guys another alternative to the beef that just ocurred to me after reading a few comments: you can always just ask your butcher to slice the meat like this. Not all, but many butchers will likely oblige. 🙂

In Mexico we call it “ Gaonera(Taco) de Rib eye with Costra de Queso” and you made a great version .
In some places the meat is marinated with a touch of lime , and for the toppings we also use cooked onions , and “onions with habanero “

You did not rinse and dry your tomatilloes to remove the sticky layer. Good lord you have never once read a Diana Kennedy book. Not washing your tomatilloes is like not washing your rice.
