Guys another alternative to the beef that just ocurred to me after reading a few comments: you can always just ask your butcher to slice the meat like this. Not all, but many butchers will likely oblige. 🙂

In Mexico we call it “ Gaonera(Taco) de Rib eye with Costra de Queso” and you made a great version .
In some places the meat is marinated with a touch of lime , and for the toppings we also use cooked onions , and “onions with habanero “

You did not rinse and dry your tomatilloes to remove the sticky layer. Good lord you have never once read a Diana Kennedy book. Not washing your tomatilloes is like not washing your rice. You wash before you char and never wash after you char. You cannot talk about Mexican cuisine without knowing Diana Kennedy.. She is the Julia Fairchild of Mexican food and hates the moniker.
