Yea that look dry. You did no prep!! keep the skin on, insert season between skin. and also skip mustard use melted butter with rub mix in. And rub it the turkey it in. The butter will protect it from being dry and at the same time the skin on the turkey will crisp up.

You can leave the skin on, do everything else the same, and just open the wrap and crank the temp up at the very end to get nice crispy skin. Or, pour hot oil over it.

You can leave the skin on, put butter in between the skin and meat, then get hot oil, super hot, and just slowly pour it over the top it will be crispy and Smokey.
The skin is the best part. I don’t know if wrapping it makes the skin turn out like that, but I think I’ll keep doing them unwrapped.
