Just grill a sliced egg plant with some mushrooms and put whatever seasoning, some lettuce, pickles whatever between those toasted buns. Now that’s plant-based.
The guy uses plant based meat for CO2 purposes but the aluminium for "easy cleanup" that he will throw away would probably emit even more CO2 than that amount of meat (even if the aluminium is recycled)

The foil will be infusing into the burgers possible causing heavy metals in the burger.
That's not a smash burger that's just using a grill weight small burgers you smash a ball into the shape. You don't leave a weight on it
