I like to sear it with the lid on so it warms the center a little more. I like to leave the center raw but also don't like the center still cold.
My "fish monger". Of course I have a fish monger. He's right next door to my beer monger.
You used the same knife you cut the raw fish with to cut the cooked fish.

Cutting cooked fish/meat on the same board you've used for cutting raw fish/meat without prior washing is a recipe for food poisoning.

Excellent! I feel a lot of people try to over season yft or bft for that matter. Tuna is like a tbone or strip…..salt-pepper-dont overcook!
The cross contamination is absolutely disgusting. After touching that raw fish you stuck your hand in the salt and pepper and then touched the jug of oil. You need a lesson in cross contamination and should be embarrassed to post this video.
