LEARN HOW TO MAKE A NUT FREE DAIRY FREE CREAMY PASTA RECIPE WITHOUT CASHEWS!
LAY HO MA (how’s it going in Cantonese)! Creamy pastas are a breeze to make and they’re always a crowd pleaser. Join me in this episode and learn how to make a tasty, creamy nut free and dairy free pasta recipe tonight!
Ingredients:
1 onion
3 pieces garlic
120g cremini mushrooms
1/4lb pasta
1 tbsp + 1 tsp olive oil
salt + pepper to taste
1/2 cup sunflower seeds
1 cup + few splashes water
1 tbsp hemp hearts
40g spinach
sprinkle of chili flakes
Directions:
1. Bring a pot of water to boil for the pasta. Finely chop the onion and garlic. Brush off the dirt from the cremini mushrooms with a paper towel. Then, thinly slice them
2. Boil the pasta to package instructions (in this case 9mins). On another burner, heat up a sauté pan to medium heat. Add 1 tbsp olive oil followed by the onions and garlic. Season with salt and pepper. Sauté for 5-6mins
3. Into a high powered blender, add the sunflower seeds, 1 cup water, hemp hearts, and the sautéed onions and garlic. Blend on high for about 1min
4. Heat up the sauté pan back to medium heat. Add 1 tsp olive oil followed by the cremini mushrooms. Season with salt and pepper to taste and sauté for 3-4mins
5. Add the spinach and pour in half of the creamy sauce. Add a couple splashes of water. Drain the pasta and add to the sauté pan. Stir and cook for a few minutes. Plate the pasta and sprinkle over some chili flakes to serve

Love this! I like seeing different ways to create non-dairy cream sauces. I will watch any and all recipes for new ideas! I recently tried a new cashew sauce and it was SO much better than cream sauces I used to make many years ago. I look forward to trying this one.
Why didn’t you use the pasta water to thin it out?
a pasta dish is not an equation: it looks too rational to me. Pasta seems a little overcooked it should be drained al dente. Come to Italy if you want to see more veg.pasta recep. with very basic ingredients like pasta garlic and olive oil.

As someone who works as a barista, Vitamix is a namebrand that impresses me constantly. We use vitamix blenders for foam, and they always impress me with their power despite being used constantly, and in rough conditions. I would buy it if I blended things more, but I just don't. If you juice something or blend something more than three times a week, it's a brilliant investment 👌
Love this! Not only because it's delicious (made it yesterday, it was really good!) but also because it allows me to make creamy stuff, which would otherwise be made with milk or double cream… This unlocks so many options in my dairy- and egg-free diet. I made it with cashews because that's what I had at hand but definitely gonna try with sunflower seeds next time. Thank you Wil, once again you don't just share a recipe you literally help change my lifestyle. Best cooking channel far and wide. 🥘❤

I just so happen to have a bag of hulled, organic sunflower seeds & will pull some spinach from the garden in the morning! Mushrooms to rehydrate.

can this be done without the hemp hearts or will that ruin the texture? i don’t have the slightest idea where i could buy them without ordering them online, which isn’t always affordable (or accessible) in my case.

What a great recipe and a great video altogether! I do have a couple of comments: 1) Perhaps reminding people that cashews are not actually nuts would help some people not fear them in case of nut allergies, and, 2) Upon adding the couple of splashes of water to the mix of mushrooms and spinach leaves and the cream, would the use of water used to boil the pasta be an option? Yum! I would never have thought to try sunflower seeds. If you use water from the pasta pot it makes the sauce more creamy 🙂

I really wasn't sure what you were going to create the sauce with. I have plenty of sunflower seeds and hemp hearts (and a Vitamix!) so I will be making this tonight. I was thinking of making a pasta dish, so this is perfect timing. While I am not vegan, I am strongly plant based. To accommodate my heavily meat-eating husband (but happens to also like vegetables), I will make a meat dish as a side. Thinking I may do a lentil (or walnuts) and beef meatball for him (I sneak in non meat goodies to reduce meat load).

“Not cashews” is the name of my budget level…. But you lost me at vitamix. Hint: many of us aren’t impressed with what we can no longer afford. Recipe looks yummy otherwise.

Honey. The cooking time on pasta is INCLUDING the time the pasta is added to AND mixed simmering into the sauce also – NOT the time the pasta is boiling in water. NEVER boil the past in water for the full time it says on the packet. Let me teach you the correct way. If the box says 9 min. you remove pasta from the boiling water at 7 mins. then add and simmer in sauce for another 2 min = 9 mins. Then you'll finally get to taste and TEACH what pasta should taste like. And NEVER 3 cloves of garlic. Ya welcome!
