I really want to make your various pastas but i noticed you often add whisky or wine. I am islam i couldn't drink alcohol, so if i dont add whisky, will it make so much difference in taste? Or do you know any replacement?

This came out AMAZING. I love this idea! It is so clever to pair the sweetness and tang the whiskey brings with the smoke of the salmon. It feels like a trip to the mountains! Delicious!
No,no, no! Never cook cured meat or fish products like smoked salmon and prosciutto in a sauce ( exception is pancetta and guanciale which are designed to be cooked), they become too salty and in the case of the smoked salmon it destroys the lovely buttery texture. If you must use them in your dish, add at the last minute, toss gently and serve. You're welcome!
