Fresh tomato sauce 🍝
This is how my Sicilian grandmother taught me to make tomato sauce—no machines, and in no time at all. Nothing compares to the taste of homemade tomato sauce, especially when it’s poured over a generous portion of pasta or spread on a pizza
Ingredients:
1 kg tomatoes
1-2 tbsp olive oil
1 small onion
About 1 tsp salt
Basil leaves to taste
Instructions:
1. Soak the tomatoes in a bowl or pot with hot boiling water for about 5 minutes to loosen the skins.
2. After soaking, peel the skins off the tomatoes.
3. Chop the peeled tomatoes into piece.
4. In a pan, heat a few tablespoons of olive oil over medium heat and sauté finely chopped onions until they become soft and translucent, about 5 minutes.
5. Add the chopped tomatoes to the pan with the onions, stirring to combine. Season with a pinch of salt to enhance the flavors.
6. Let the mixture simmer on medium heat for about 15-20 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens to your liking.
7. If you prefer a smoother sauce, use a hand immersion blender to blend the pieces of transfer the mixture to a blender.
8. Once blended, add a few chopped up basil leaves and your quick tomato sauce is ready to be served immediately or stored for later use.

Love the simplicity of it. No – everything does not need to contain a mountain of powdered spices. Sometimes the base ingredients must be allowed to shinr for themselves.

If you blend them anyway I feel like you don't need to peel then
5 minutes? Score the tomatoes, then 30 seconds in boiling water staight out of the kettle. Works like a charm and you saved yourself another 4 and a half minutes !

Italians use mostly canned tomatoes. Fresh are to watery. And mixing is a no go
Add a little lemon and sugar to the sauce.🤌
A PINCH?
Before you cross cut the peels of tomatoes, then you put them in boiling hot water for 1-2 minutes. Then you peel off tomatoes and cut them in half (better quarters) and take away the seeds. Now you have tomato pulp without seeds and peel. You proceed as you want.
Salted onion or garlic and a pinch of hot pepper "arrabbiata" sauce is well done!❤
And did you know that if you don't peele them they are going to taste exactly the same since you blend them ?
