Let’s knock out one of the easiest ways to elevate your steak at home… a pan sauce!
Welcome back to Episode 5 of my How to Cook A Steak Series! This video focuses on an often missed opportunity to bring extra flavor and texture to your steak.
When you cook your steak, don’t let the drippings or juices go to waste!! For my medium rare steak, 3-4 mins per side on medium high heat was perfect!
Now on to the sauce…
2 tbsp diced shallots
1/3 cup to 1/2 cup beef stock
1/4 cup heavy cream
1-2 tbsp butter
Salt and pepper to taste!
Start by adding the shallots directly to the pan after cooking your steak! Just make sure you reduce the heat to medium before doing so.
Let them soften and start to caramelize which only takes a minute or two… then add the beef stock!
After simmering for about 2 minutes, stir in the heavy cream and whisk. I let this simmer for another minute before adding the butter to help emulsify and bring the sauce together.
Let it reduce on medium low heat for 4-6 minutes, and once thick enough to coat your spoon, taste for seasoning and enjoy!!
