Tips!
*Cook the meat in the pressure cooker or stovetop the night before with salt, onion, and garlic, reserve 4 cups of its broth, skim the top to remove the fat!
*the amount of water to add to your steamer pot depends on the size, each pot is different
*wrap the tables with tamal wrap(parchment paper) this helps to keep the tamales secured
*steam on medium low for up to 2 hours
*make sure to clean and soak the corn husks a night before
Ingredients: this recipe makes 50 tamales 100 of made small
For my Chile Colorado
3-4 lbs shredded meat
35 New Mexico or guajillo chile pods
7 chile nachos
1/4 onion
10 garlic cloves
1 tbsp oregano
1 1/2 tsp cumin seeds
1 tsp peppercorn
Salt to taste I used 5 1/2 tsp
For the masa: cook a little pice to taste it for salt **
8 lbs plain masa( found at any Hispanic supermarket or tortillería)
3 tbsp plus 1 tsp baking powder
Salt to taste I added 1 tbsp
24 oz rendered fat
1 1/2 cup Chile Colorado
3 1/2 cups broth
1 serving of love 💕

Hello beautiful lady! Going to give these a run. I have made tamales the last four years and they have been some of the best I have ever eaten and I’m an old white guy raised in a west Texas barrio…. My wife spreads the masa and I add the filling and fold them up….we have a little assembly line, it works great.
Unfortunately I have never had a tamale that I wanted another of. I lived in Texas, had many tamales and never really liked the masa it was always plain and really bland. I've had many different tamales from many Abuelas and this is the only one that makes me crave a tamale. You treat the masa as a star of the show instead of only a vessel and that's what's I've always been missing I think.

Can you please make a short video on what you mean by “cleaning” the chiles? Does it mean wash the outside? Remove stem and seeds? Wash the inside too?? Some of us don’t know cause we never used them. Thanks!
