Texas tomato based… what? It is all about fatty beef brisket and the smoke, the rendered fat is the sauce. Tomato based barbecue is on the counter next to the beans and pickles for the uninitiated imports that ask for the lean brisket.

Pork steak shoulder cut into strip, Gochujang (Korean Chili Paste): 1/4 cup chili powder, ginger, garlic, shallots, pear, soy, oi. 450 F for 15 to 20 minutes.
Green mix, cucumber, jalapeno, 2 Tbsn red wine vinegar, 2 Tbsn sugar.
Toast buns and add remaining Gochujang sauce.

Josh! NC is often whole-hog pit bbq. If you were just going to use a shoulder, you should have made Memphis-style. Also, no pickles. Also also, two things wrong with the slaw, those being the inclusion of the red onion and the omission of celery seed.
