Did you know that I recently went to Milan for the World Pasta Day? So today we are going to cook a pasta dish that is inspired by my trip and with a Chinese twist. It’s pasta in scallions, ginger, and garlic sauce. Italian dry pasta is also very healthy. It is made with durum wheat which contents 70% complex carbohydrates, more than 10% protein, and fiber and minerals. So if your dry pasta has a rich ivory approaching yellow then it’s definitely made with durum wheat.

With nothing better to do, I decided to see if the brand you used, offered a healthy alternative. They do offer a heathier one, but I still wouldnt say its actually HEALTHY. The manufacturer is really deceiving us with the advertising, if you pay close attention. Here is the info from their site: https://www.barilla.com/en-us/products/pasta/whole-grain/whole-grain-angel-hair. I copy their exact wording: Water=We use Purified water in our products, Whole Wheat=Pasta made from 100% whole wheat. Think about it. Why isnt the description of the 2nd ingredient worded, Whole Wheat=100% whole wheat. Because its not 100% Whole Wheat – its some mystery % and processing that they don't disclose. (Read with Chris Chapel style sarcasm) "Interesting how a box that says 100% Whole Wheat on the front, has 5 other ingredients listed by law on the back, and we're not in China (http://www.amazon.com/Barilla-Angel-Whole-Grain-Pasta/dp/B009SLXJY6).
To be fair to the manufacturer, I've had REAL whole wheat pasta (some years ago) and it is horrible. It literally tastes like shredded paper (OK-Yes, I did eat some paper when i was in elementary school-but i refused to eat the paste like some of the other kids). Anyway seriously, you cant sell the real stuff to anyone except, the first time (like when my wife bought it), or to a few people who are obsessed with eating whole grain, and just dont care that it tastes awful. I will bet you the one in the link has a somewhat similar texture and flavor to the one in your video, just slightly gritty – we'd all eat it because its got just a little bit of whole wheat in it.
Hi CiCi – me again. Going back and watching this again, made me think…i'm pretty sure you are being deceived by the clever advertising that durum pasta is good for you. From what I understand, other than some whole wheat pastas (not all, some are deceptive too) while they start with 70% complex carb to make the pasta from whole wheat, once its processed and broken down by the machining and bleaching into flour, its effectively no longer complex. Its so pre-processed that your body easily turns it into sugars, and sugars to glycogen and in excess to fat. A lightly baked potato is a significantly healthier starch pound per pound. But the carb percentage you are taking about in a balanced diet, should be things like eggplant, green veggies, beans, and whole grains that are complex, fibrous, and not overcooked, all the way to your mouth. While these are categorized as carb foods, same as pasta, they ARE good for you – but I believe the pasta you prepared is roughly the same as eating a roll of "Lifesavers" candy. That said, I love pasta, and I suspect its fine in moderation (well, so are the lifesaver candies) – but it should not be that 70% of daily carb you mentioned. Most people will develop diabetes by the time they are 60, with that balance of pasta and other refined carbs – check it out. I dont think the noodle manufacturers that invented "World Pasta Day" want to point that out 🙂
My Chinese fav is definitely spicy Sichuan DanDan Noodle – and Italian favorite is the rich egg, cheese & bacon flavors in Pasta Carbonara. I agree with you that carb is healthy and essential, but only in small amounts. Most Americans will eat several cups for a serving, and your body immediately turns it all into sugar, which over many years can often lead to diabetes. Rich sauce or non sauce, processed pasta and rice portions should actually be less than a cup cooked. But every now and then its OK to splurge 🙂
