2 pounds (908g) top round
1/2 cup (65g) all-purpose flour
salt and pepper – to taste
5 tablespoons (75ml) neutral oil – divided
2 large onions – chopped
3 ribs celery – chopped
1 large carrot – chopped
5 cloves garlic – minced
1 28-ounce can plum tomatoes
1 1/4 cups (300ml) low-sodium beef stock – plus more as needed
1 tablespoon (13g) sugar
1 tablespoon (15ml) Worcestershire sauce
1 teaspoon coarsely ground black pepper

I have great memories of a very talented mother whose cooking could make you slap anyone but her. If you grew up or are growing up in a similar home, thank your mom. Mine is 94, has Alzheimers, and can't remember being the artist she was. Even though she doesn't remember, she enjoys hearing stories of all the wonderful things she did for her family.

We have made a version of this my whole life.
We only used meat, onions, canned tomatoes, flour, and seasoning. Added some butter to make the sauce richer sometimes.
It's easy, cheap, and awesome. We never tenderized – slow oven, all day, it was fall apart tender by the end.

As a Brit I think I can save you some tongue twisting time when it comes to that peculiarly English tangy and savoury liquid condiment.
Despite the spelling everyone I know, without exception, refers to it as ‘Worcester sauce’ and pronounces it like ‘Wooster’.

My mom, back in New York, made Swiss Steak pretty often. Same ingredients… but a totally different preparation. Hers had big chunks of meat, no pounding, and veggies and simmered with no touching (that was important!) for those same 2 hours. I imagine hers was because it was at the end of a long work day for her and she did not want to fuss with the added prep work. But the flavor was probably very similar.
Wine will never help this dish. It’s a depression era dish when nobody could afford wine.
It pairs best with cabbage or other greens and cornbread and iced tea.
Anything tomato based loves to be peppered.

You Worcestershire the way the people from Worsetershire say it.
The meat used for this fish has very, very, very little fat.

Most people here in the UK just call it "Wooster" sauce. The funniest I have heard is "Wash your sister" sauce. You're right – no-one rally cares. 😊
my Moms Swiss steak recipe uses red and green peppers instead of carrots and celery. a twist on the recipes is the Hungarian pancake. its Swiss Steak with the meat shredded served on a golden brown potato pancake and sour cream drizzled on it

Slow cooker Dutch oven those 2 cooking tools. This was last night for three people to go to a restaurant 66.00. yeah it's very expensive to consume food outside of your house now. Buy good ingredients and watch the show I promise. You will learn how to cook and then go to McDonald's once a month
My mom prepared this dish often for us when we were growing up. She served it with rice. It was truly one of my favorite dishes that she prepared along with her Beef Stroganoff and Hot Tamale Pie. I am 67 now and my mom stopped cooking once me and my siblings left for college. Those were some fantastic family dinners and this video brings back wonderful memories. Thanks.
