  1. honestly, I prefer to have some Gricia then Carbonara only because I could eat more!! the Egg in the Carbonara make it heavier than the Gricia…little suggestion, try to simmer the fat of Guanciale with a bit white wine until reduce, the rest is perfect!! well done from Italy
