This looks less like a thanksgiving recipe and more like a thanksgiving leftovers recipe, that said it actually looks pretty good.
Yeah that’s not a mac n cheese but it seems interesting, maybe I’d just cut the veggies smaller so it’s easier to get them in the same bite as the pasta though
Honestly it looks like a great way to get some veggies in on thank giving, I don’t know about you but usually the only veggies I have are green bean casserole, mashed potatoes, or if they have it in the stuffing. So if you have a picky kid or something just cut the veggies smaller or even better blend the veggies into the cheese sauce and boom kids are getting veg on a holiday. Note: this is my holidays now since I don’t host growing up my mom usually hosted for us and (attempted) to make roasted Brussels or asparagus with dinner, usually it was gone before because me and all but one of my siblings are vultures when it comes to vegetables.
I think a lot of people might like this more if the veggies were blended into the cheese sauce, lile making a homemade red sauce. Maybe the chunks of veggies don't boat their float 🤷🏻♀️ then again, what do I know? Lol

Everything but the murderously long cooking time for the sprouts. I thought society had grown past overcooking our green vegetables. I thought we were better now.
I'm conflicted 😭 on the one hand I want to try it for the flavor, but on the other hand it looks like a texture nightmare (and also the squash)
You could easy substitute Brussel sprouts for something else if you disliked them

Stuffing on top of Mac and cheese sounds delicious. Just swap out the veggies for ones you like (or just more cheese) and this seems like a winner

But why would you try this expecting to like it if you didnt like the ingredients? Which sure fine try things out of your comfort zone but dont try something knowing you dont like the ingredients and then give it a low rating as if you didnt know you werent going to like it.
