Ingredients:
Serves 4
Marinating the beef

280g chuck tender – sliced thinly against the grain
2 teaspoons of corn flour
1 tablespoon of cooking oil
0.5 teaspoon of baking soda
2 tablespoons of water
A few dashes of pepper
The rest of the ingredients

7 – 8 slices of young ginger
2 onions – sliced thinly
1 tablespoon of oyster sauce
2 tablespoon of dark soya sauce
2 tablespoons of light soya sauce (low sodium)
4 stalks of spring onion
1/2 cup of water
2 tablespoons of Chinese cooking wine (Shaoxing Huatiao Wine)
1 tablespoon of sesame oil

I tried this recipe 2x this week – absolutely wonderful taste and not difficult to prepare. I also added a few other vegetables (because I had them around) – boc choi, mushrooms, a little green pepper & bean sprouts and added them the same time as the spring onions. Delicious taste. Came out so well… I usually use egg to marinade so I was out of egg and baking powder worked out well… I added some cornstarch for some gravy…. Thanks again
Half a cup of water for the sauce was a bit too much for mee even though I was cooking more meat. But the rest is super easy and very delicious! Definitely making it again.

GREAT! THANKS!!! I keep ending up with tough beef when I marinade it with all the ingredients you put in at the END! And the Baking soda is probably a key… I thought the beef in beef fried rice in restaurants was tender because the use MSG or some other tenderizer… But no!!! it's just cooking technique… IMHO

Much too strong taste with 2 tbsp Dark Soy Sauce. Use half the amount or less and it might be better.
