The Only Steak Marinade You Need – Thai “Crying Tiger” Recipe



The classic Thai marinade for grilled steaks is really the only marinade recipe you need, and in the video I will explain why! I also share with you THE ultimate steak dipping sauce that no Thai person can ever go without: nam jim jaew. If you don’t eat beef, both the marinade and the sauce can also work for any other grilled meats like chicken, pork, or lamb.

I did not mention in the video, but on the blog post (linked below) I share more about the common Thai dish name “Crying Tiger” which this kind of is.

  2. There was a restaurant in my home town that served a grilled beef salad dish they called "Tiger Cry" that came with Nam Jim Jaew. The beef was grilled but also had a powdery/crusty texture. Still have never figured out what that was. Best guess is the toasted rice powder?

  4. We have a local Thai restaurant that makes Neua Yang and Nam Jim Jeaw dipping sauce. it is my husband’s favorite so I when I saw this recipe, I had to try it. I made it tonight following your recipe exactly. My husband LOVED it! Said it was way better than the restaurant. Thank you for sharing!!!

  5. That looks so delicious! I have been wanting to prepare a good ol' tenderloin fondue with different dipping sauces. I usually just dry marinate with salt and pepper and then make up different sauces that catch my eye but that looks perfect. I'm not sure how the sugar will handle the hot oil but I think I will still put a little bit in the marinade.

    Since you said the marinade allows the steak to be served with standard western sides – I think it'll go nicely with my usual homemade Caesar salad and cheesy garlic-bread. Yum!

  6. Oooooooh. Did this tonight with a serving of pad moon sen. (Your lock down recipe) this dipping sauce is AMAZing! zing zing! My 6 years old helped me, he has a blast and loved it. (Well not the dipping sauce, but I. Add it mild with goshugaru instead of cayenne pepper) but he loved the meat!
