The Perfect BBQ Ribs: PART 2 – The Cook
-To prep, remove the membrane (if still on) and coat a baby back rack with olive oil and the rub of your choice. I used @eatrubrub Spicy KBBQ (not sponsored) and added a little extra salt too.
-Smoke (in a @drevos_international smoker) with applewood at 240F / 115C until the internal temp is 150F/66C. A thermometer is a must… I use @combustion.inc
-Spray generously with apple cider vinegar and wrap tightly with butcher paper.
-Return to the bbq WITHOUT smoking anymore and heat until the temp is 203F/ 95C
-You can use sauce if you’d like… but you don’t need it.

I have been putting Saint Louis style in the Crock-Pot with different types of rub and sauce.
There's a very spicy Hot Ones sauce that has some tropical fruit in it.
Along with Worcestershire sauce, Onion powder garlic powder.
Crushed pineapple with all the juice, cooked it for about 4 hours. Turned out fantastic!
After I skimmed off the fat from the baking the ribs, I added the pineapple and all the sauce to the baked beans that I was making and that was a fantastic accompaniment to the ribs.

Yea I’ve never liked apple wood smoked meat, it has a really weird taste (sweetness maybe?) to it that doesn’t go well with the savoriness of the meat, oak, hickory, or my personal choice mesquite far better imo
