The perfect Bread Pakora!!! #recipe



Filling:-

Oil: 4-5 tbsp
Jeera/Cumin Seeds: 1/2 tsp
Green chillies: 2-3
Ginger: 1 inch
Red Chilli Powder: 1 tsp
Haldi: 1/4 tsp
Coarse coriander powder: 1 tsp (heaped)
Boiled potatoes: 4-5
Salt: to taste
Garam masala: 1/2 tsp
Amchur powder: 1/2 tsp
Chaat Masala: 1 tsp
Fresh coriander: 1/4 cup
Paneer sliced: 3-5 slices
Green chutney: 1 tbsp

-Heat oil in a large Kadhai, add the cumin along with chopped green chillis and ginger. Saute till the chillis and ginger are slightly cooked.
-Add red chilli, Haldi and coriander powder, cook for 15 seconds and add crushed boiled potatoes. Mix everything lightly.
-Add the garam masala, amchur and chaat masala, stir properly till everything is combined and finish off with fresh coriander.
-Take a decent amount of potato filling into a ball, spread that over a slice of white bread using your hands or a spoon. Make sure the potatoes are spread evenly.
-Place thin slices of paneer. Spread green chutney on the second slice and sandwich everything together.
-Slice the edges of the sandwich. Slice it into a triangle.
-Heat oil for frying on medium high heat. Coat the triangular sandwiches with the batter and drain the excess.
-Add them into the hot oil and fry on medium heat. Fry till lightly golden on both sides. Take them out on a sieve to cool and fry the rest the same way.
-Once ready to serve, fry them on high heat for 30 seconds til a deep golden colour is achieved.
-Enjoy them hot and crispy with tamarind and green chutney.

Coriander Chutney:-

Coriander leaves: 1 bunch
Garlic cloves: 3-4
Green chilli: 3
Black salt: 1/2 tsp
Salt: to taste
Anardana: 1/4 tsp
Lemon juice: 1 lemon
Water: little if required

-Clean and pick the leaves from the bunch. Add them into a large blender along with everything else.
-Blend using a little water to a coarse paste. Add a tablespoon of Dahi if preferred.

Batter:-

Besan: 2 cups
Red Chilli Powder: 1 tsp
Salt: to taste
Haldi: 1/2 tsp
Baking powder: 1/2 tsp
Water: as required

-Add everything except baking powder into a large bowl, whisk with a little water, till you have a smooth batter.
-Add more water till you have a thin batter. Cover for 15 minutes
-Mix in the baking powder when ready to fry.
