This video will show you how to cook the perfect tri tip recipe! USDA Prime tri tip smoked then seared over oak! Yeah, baby!!! This is my favorite way of cooking this tender and favorable cut of beef! Seasoned with just a few ingredients (recipe below), then let the smoke and fire do the rest. I cooked this in my Lone Star Grillz offset verticle: low and slow over coastal oak, then seared them over the LSG’s firebox using Grill Grates. This resulted in some of the best tri tip I have EVER had! Simply amazing!
Tri Tip Rub Recipe:
1/4 cup kosher salt (or sea salt)
1/4 cup ground black pepper
1/4 cup dehydrated minced garlic
1 1/2 tablespoon dried parsley

Pinnacle Peak in San Dimas ! Always had a great meal there ! What a place ! Bench seating , great friendly atmosphere, a true classic steak house !
I would go to Pinnacle Pete's while I was stationed in the Tucson area. As an Airmans on payday we would go out for a great steak. The bbq pit was in the center of the restaurant and cut off ties were all over the ceiling including a Air Force tie from us. I sure miss it.

Greg, a friend told me the secret of finding mesquite that doesn't cook bitter and taste green. Use wood gathered from the sides of desert washes. Search anywhere around Bartlett Lake, Pinnacle Peak, or Apache Junction washes, ect. The key is to pick up branches only from the washes, not the open flats. Build a quick small fire right there to check the smoke. Tell me I'm not wrong. No thanks needed but thank the old Mexican wood cutter who told my friend. He said there are 2 other types of mesquite but they flavor meat like cooking w/green wood no matter how long it dries. Don't tell the Yankees.

Mr. ballistic I have a ? Every time I cook prime tri-tip from Costco, usually trimmed off all the fat cap, it doesn’t taste as good as a cheaper cut from the regular grocery store. Could it be that it usually sits in the freezer for a couple weeks.
