• Let your chicken set on the counter to remove the chill before cooking

• Preheat your oven to 450 ° F to cook chicken hot and fast

• Let the cooked chicken breast rest for a minimum of 10 minutes before cutting or slicing

16 oz jar of fire roasted Hatch green chiles
1 jalapeno
1 spring onion
1 tomatillo
a handful of fresh cilantro
juice of a lime
1 tsp chicken bouillon powder
1/3 cup water
6 to 8 oz American Cheese shredded
season and salt to taste

  1. I have been to Chuy's once. It was within the past 4 or 5 years. The place was pretty busy but I have to say I wasn't impressed. I don't even remember what I had and I have not been back. Don't know if they are considered regional. I do know everyone has their own taste. I grew up in Dallas but moved to Corsicana 20 years ago. The favorite Mexican restaurant to those who grew up here serves cheese enchiladas stuffed with Velveeta and the chili con carne tastes just like Wolf Brand which was originally made here many years ago. I really don't consider myself a Mexican food snob, I just know what I like. Since so many of your recipes appeal to me, I'm sure if I had a working stove I would be trying many of them all the time. I've brined, I've marinated, you name it. They never turn out as good as these did. Even my husband said I should leave a comment for you. They were wonderfully moist and tender.     We started eating the carnivore diet and we would very much appreciate it if you made some ground beef only recipes.
    I had real bad diabetes and I no longer have to take any medications, insulin for it.
    I've gone to Sam's and bought some ground Chuck roast with brisket added to it. It was the most delicious hamburger patties! Especially eating it with bacon.

  4. THANK YOU! … I JUST made a batch of chicken breasts and they were overcooked. I batch cook and freeze so they're ready for salads. I've baked, instant pot, sous vide… but none have been stellar, just okay. Simply Mama ALWAYS has great recipes. I'll try this one next! ♥
