  1. I’m pretty sure that the taste difference is also due to the yeast in the beer being a great source for glutamate, thus making things taste more umami. Ever since morons think msg is the devil because one (1) random physician said so in a letter to the editor, lots of foodstuffs list yeast extract instead of MSG. Unsurprisingly, it adds depth and meatiness to the flavor just the same.

  2. Because Beer! Not necessarily because of the alcohol but the darker more flavorful beers are certainly my preference, and the non alcohol beers (where I live at least) are pale and relatively tasteless even compared to other pale beers, more like seltzer.
