The ULTIMATE CHICKEN POT PIE SOUP – One Pot Comfort Food



Chicken pot pie soup is creamy, comforting, and hearty. This soup has all the comforts of Chicken Pot Pie without the effort of making the crust. We love this with freshly baked biscuits.

POT PIE SOUP INGREDIENTS:
►6 Tbsp unsalted butter
►1 medium yellow onion 1 cup chopped
►2 medium carrots thinly sliced into rings
►2 celery sticks finely chopped
►8 oz white or brown mushrooms sliced
►3 garlic cloves minced
►1/3 cup all-purpose flour
►6 cups chicken stock
►3-4 tsp salt (or to taste)
►1/2 tsp black pepper
►1 lb Yukon gold potatoes peeled and sliced into 1/4” thick pieces.
►5 cups cooked chicken (shredded)
►1 cup frozen peas
►1 cup corn (frozen or canned)
►1/2 cup whipping cream
►1/4 cup parsley finely chopped, plus more for garnish

  1. So, I'm making this (can't wait until its finished. Smells Great!) and just wanted to add. First: A can of drained corn and a Bag of frozen peas come in sizes larger than a cup. What to do with the rest?

    Tossed them in. Also, whip cream comes in pint sizes. Didn't use it all but, put a bit more than 1/2 cup. Also put in more than the 5 cups of Rotisserie chicken (Costco) to give a larger base. Used Salted butter and didn't add the amount of salt recommended. Slow roiled it down to a creamy goodness.

    All in all? Delicious!

  2. I just love the style of your cooking you are very organized and even though I don't make or haven't made your recipes the ingredients make a lot of sense and I already can see with my eyes that they taste very good you are very natural very realistic and very relatable

  3. Okay, I just made this as written, aside from omitting mushrooms because I'm not a mushroom person. Easily the best new recipe I've tried in weeks or maybe months! Pretty sure this is going to make it into my regular repertoire, whenever I've roasted a whole chicken and have lots of leftover meat and boiled-carcass chicken broth. Stellar!
