  1. The Peruvian style ceviche is the best in my opinion. Don't think it's what the guys prepared. I believe the ceviche here was more like Salvadorean or Ecuadorean maybe. Try Peruvian someday- so delicious! And you can ask for mild or hot depending on your heat palate

  2. Heh! I've used pancake mix in my batter for about 30 years so, the secret is out. Although, I usually use corn meal instead of more flour for extra crunch. Too bad about the mustard though. Just thinking about mustard is enough to make me retch!

    Try using red Fresno peppers instead of jalapeno in your Ceviche. It's about the same or slightly lower heat but adds another citrus/fruit tone.
