► 1/2 English cucumber, diced (2 cups)
► 10 oz (1 1/2 cups) cherry tomatoes, halved
► 1 bell pepper, any color, seeded and chopped
► 1 small red onion, chopped (1/3 cup chopped)
► 4 oz crumbled feta (1 cup)
► ½ cup pitted Kalamata olives (or added to taste)
► 1/4 cup parsley, finely chopped
GREEK SALAD DRESSING:
► 1/3 cup red wine vinegar
► 1 tsp dried oregano
► 3 garlic cloves, grated or minced
► 1 tsp fine sea salt, or added to taste
► 1/2 tsp freshly ground black pepper
► 1/2 to 2/3 cup extra virgin olive oil
