🍲Instant Pot Chicken & Rice Burrito Bowl (Base Recipe 4 portions)
4-6 skinless, boneless chicken thighs
1 cup brown basmati rice (rinsed)
1 cup black beans (tinned, frozen or cooked from scratch)
1 cup frozen sweetcorn
1 cup salsa (choose your favourite)
1¼ cups vegetable bouillon or stock
2 tbsp Ottolenghi Sweet and Smokey or Taco style spice mix
½ tsp black pepper
Salt to taste

🧀Crispy Quesadillas (Air Fryer or Pan)
2 tortillas
Grated cheese
Chicken & rice mix
Peppers, Onions and any other fillings you like
Spritz olive oil
Salsa or sour cream to serve (optional)

Air fry at 190°C for 5–7 mins (flip halfway) or pan-fry until golden

🫑 Stuffed Peppers
1 large bell pepper
olive oil
Chicken & rice mix
Grated cheese on top
Air fry: 180°C for 10–12 mins
Oven: 180°C for 20–25 mins

🥬Lettuce Wraps
2 Large lettuce leaves
Chicken & rice mix
Optional: sriacha or other hot sauce – extra veg or herbs to your taste

  1. Olá Susan, eu assisto do Brasil. Amo suas receitas! Quero comprar uma Instant pot, por isso quero conhecer mais sobre ela. Aqui no Brasil temos ótimas opções de panelas de pressão elétrica, porém todas com revestimento em teflon, eu odeio teflon! Gostei da IP porque a panela é de inox. Mas uma dúvida, ela realmente cozinha mais rápido que as demais panelas elétricas?

  2. I had the frozen black beans, frozen sweetcorn and the brown rice. I didn't have the Ottolenghi spice mix nor the salsa. However, I did have Ras Al Hanout and some frozen passata. I had to put the frozen block of passata on the chicken rather than under.

    It all worked and is lovely and tasty.

I had to get rid of my Ninja Foodi cookers due to their large recall….and wanting recipe ideas for the new Instant, here you are!! Looking forward to more ideas from you. BTW- I cook my own beans and love your freeze idea for them. Very useful.

I had a craving for the Mexican dish pazole the other day…used country style ribs…hominy..Adobe and ancho chilies white onion..chickenstock…it was wonderful made in the instant pot. Im amazed at all of the meals that can be made and infused with so much flavor….and like u I put food in and go "have a lie down"❤❤❤

  9. This is right up my alley! In fact I’ve been nursing a similar dish for 3 days, so far. I live in s. California where Mexican food is prevalent, there’s many choices for a base, I use enchilada or red Chile sauce or tomatillos, chipotles, etc, etc., you can’t go wrong! Add sautéed veggies one day, guacamole the next, a can of this or that, whatever’s on hand, to stretch it out. Heated corn tortillas are a staple.
