Here is the Ultimate Oven Pork Rib Roast Recipe. This herb crusted rib roast will be the highlight of any meal and will be sure to impress your family and friends!
1 Bone-in Pork Loin 4-6 lbs
Brine
1 gallon water
.75 cup white sugar
.5 cup Kosher Salt
Herb Paste
.25 cups oil/butter of choice
2 tlbs Herb de Provence or dry herbs of choice
1 tlbs coarse black pepper
1 tsp Paprika
1 tlbs Kosher Salt
Basting sauce – Melted butter, minced garlic and parsley
Brine roast overnight
Remove from brine and dry roast well
Truss roast and cover frenched bones with foil (optional)
Season Roast with herb paste
Pre-heat oven to 350F and cook roast
At 45 minutes, baste with melted butter, parsley and garlic sauce (baste every 20-30 mins)
At 1 hour and 15 minutes, turn oven to 425F and cook for about 20 minutes
Check roast temperature and turn oven to 475
Cook roast to 142-143 internal temp, then remove and rest before slicing

Served this to the family for Christmas Eve dinner and everyone was blown away — it's ALL THAT! Cooked at 275F til the probe said 135 degrees internally, then blasted it at 500F for 15 minutes. Final temp (after resting) 149F. Great work, Papa Joe! Many blessings.

question…when you RAISE the oven Tempeture…do you pull the roast OUT of the oven, till the oven Tempeture gets to the Higher Tempeture, and THEN put it Back in the oven/Very important question as it takes AT Least 4 to 5 minutes for Oven to raise from "350 to 425"…HELP
Made this last week….so amazingly good! The paste was delicious. I did not truss the roast and regret skipping that step. The cooked temperatures varied because of my neglect. Regardless of my poor judgment the pork was super juicy and a new family favorite. As always thank you.
