The Ultimate Sourdough Bread Recipe | Easy Step-by-Step Guide for Beginners

Ready to bake your best loaf yet? In this video, I walk you through my go-to sourdough bread recipe—perfect for beginners and seasoned bakers alike! I’ll show you exactly how I make light, crusty, delicious sourdough at home using simple ingredients and a clear method.

Recipe (Per Loaf):
375g Water
100g Active Sourdough Starter
12g Salt
500g Bread Flour

Timeline & Method:
Day 1 (7AM): Feed starter at a 1:1:1 ratio. Let it double in 6–8 hours.
Day 1 (4PM): Mix dough (expect a shaggy mess!) and rest for 30 min.
Perform 3 stretch & folds, 2–3 coil folds every 30 mins.
Day 1 (10–11PM): Place dough in fridge to proof overnight.
Day 2 (4PM): Remove, shape, rest 20–30 min, envelope fold, and cold ferment again for 24 hours.
Day 3 (4PM): Preheat Dutch oven at 500°F. Score & bake covered 25 min, then uncover and bake at 450°F for 23–25 min.

  1. Fantastic video Sonya! So basically what I have learned is, leave the autolyse (water+flour) rest for 30min before you combine with the active starter + salt. So you skip this process entirely? Thank you in advance, greetings from Amsterdam, Gladys

  3. I have always wanted to make sourdough bread but I don't feel confident yet. Watching this video makes me want to try so maybe will do that later at the end of Summer since I will be busy for the next two months and half.
