I grew up in the South eating at Waffle House for breakfast regularly, so I am a big fan of short order cooking on a griddle. I came across a video from True North Cafe in 2022 where I learned of this concept of a Hash Brown Omelette. I considered it sort of a reverse omelette. This is a very filling and hearty recipe. It’s also a great hangover cure! Feel free to make this recipe our own and load it up with whatever sort of toppings you love! In this video we cook on the brand new Traeger griddle. AKA The Traeger Flatrock Flat Top Grill. However, you can replicate this on any sort of griddle you like or a skillet.
