Everybody will love these mini beef and cheese soft tacos. Not only are they full of flavor when you are craving Mexican food, I’ve made them guilt free by using low carb tortillas. They are fun to make and will satisfy your tacos cravings!
Low Carb Mini Beef and Cheese Soft Tacos
1 pack of low carb tortillas (I used 6 Hero tortillas)
1 lb ground beef
1 packet Siete taco seasoning
1/2 cup water
1 cup freshly shredded cheese (I used half a block of medium cheddar)
Cilantro for garnish
Serve with fresh salsa and favorite taco toppings
Preheat oven to 375f.
Stack tortillas and use the ring mold to punch out 3 sets of circles.
This should yield 18 mini tortillas.
Brown the ground beef and drain excess oil with paper towels.
Add taco seasoning over medium low heat along with 1/2 cup of water. Stir and let simmer until slightly thickened.
Use a 9×9 square pan and start to fill the tortillas with a spoonful of ground beef.
Use something weighted to hold the tacos upright while you fill the rest of the tacos.
Top each taco with the shredded cheese.
Bake in the oven for around 10-11 minutes.
Serve with your favorite toppings and salsa.

I always refer back to the video, but I am listing the recipe down below footnote I would just go and buy dozen small street tortillas . There is about as tiny as she makes them if you don’t have a ring just go purchase the street, tortillas they sell them in the store.

I made them. loved it. Quick easy meal to make. Mixed a bit of leftover roast chicken in delicious. didn’t last half an hour. 👍
It's so funny how beef is advertised as grass fed! All cows eat grass ffs!
You can buy already street taco size tortillas at the store😂 everything else looks really good but wasting those tortillas to make little ones isn't necessary
