I'll take the two hours myself because that particular dashi granules brand doesn't sit well with me as it makes everything taste like (to me, at least) water from a lake. Whereas a good dashi to me tastes primarily of miso and kombu rather than fish.
When I make ramen, udon noodles and green onions are my go to. Love your work!
