At 8:59 we see the SET temp as 275 and the AMBIENT is 300 or 25 degrees higher. Why?

Mighty fine looking chicken! Way back in 2006, I bought a BBQ Guru "power draft" (the generic term for those temp control devices) for my WSM. Best purchase I ever made. Let me smoke at 225* overnight without worrying about the WSM needing tending. Plus it would hold temps in about a 7 degree band for any cook/smoke. Great for pork butts and brisket. A power draft is a must have for any charcoal fired cooker IMO. I like that your unit is wireless, mine had wires to everything. Shows the improvements made over 20'ish years.

If it has the ability to pause the fan when you open the lid, you will lessen the possibility of over shooting your temp when you close the lid again.

I really like and appreciate the fact you use so many different makes & blends of rubs. Most of the big names out there use their own, with a few exceptions. It's nice to find out about different products that aren't found on many shelves, but should be.

The bad part about the fan coming on is when you open the door it will stoke the fire too much. My Fireboard has a lid detection where when you open the lid the fan wonβt cut on until 7 min.
I am confused. How did the fan help to decrease the temp from over 300 degrees to the desired 275 degrees?? You would think the fan would cause it to get hotter?

Ceramic cookers are efficient but easy to overheat. Hence, the fan and controller should indeed be a game changer to levelize temps. Thanks for giving us cooks that we can afford and replicate. And yes, Smokin' Joe's Pit BBQ is the undisputed home of the biggest bite on YouTube. π
