Ingredients –
1 1/2 Tbsp (30ml) – Olive Oil
1.5kg (3.3lbs) – Beef Chuck, Large Diced
2 – Brown (Yellow) Onions, Large Diced
6 – Shallots, Halved & Peeled (Substitute With Onion)
4 – Garlic Cloves, Roughly Chopped
2 tsp (5g) – Ground Cumin
130g (4.5oz) – Concentrated Tomato Paste
160ml (160g) – Red Wine (See Alcohol Notes Below)
60ml (1/4 Cup) – Red Wine Vinegar
550ml (550g) – Chicken or Beef Stock or Water
2 – Cinnamon Sticks
10 – Whole Cloves
4 – Dried Bay Leaves
7g (0.25oz) – Fresh Oregano
90g (3.1oz) – Dried Currants (Optional)
Seasoning To Taste
Recipe Notes –
If you can’t consume alcohol, substitute the red wine for beef or chicken stock.
If you wish to not use fresh oregano, dried can be used instead. Use 1 1/2 tsp (1.5g).
Dried Currants are optional.
Shallots can be substituted with regular brown (yellow) onions. Use 2 extra onions.

its so refreshing to have a cooking video for noobs. I get so annoyed with videos that say put a bit of this and a bit of that, with a touch of this, what does that mean?? how much is a touch? is a touch of vinegar different to a splash of vinegar? is cooking something for a little bit 5min? 3? 1? This was a good basis for making it my own. Don't like cinnamon, didn't use it. Don't like bay leaves, didn't add them. Currants… can't get those anywhere here. Rather red wine vinegar we used 6 ounces of our favorite teriyaki marinade and added it at the step you added the vinegar. It gave the stew a nice tang without it being too powerful. Using whole shallots on top of onion in a stew isn't something I had ever considered but they gave the stew a really nice flavor.
A beautiful recipe but for me no good stew is complete without some carrots so I hope you don't mind if I add some when I eventually get to making this!

If you deglaze and then reduce the wine the alcohol is gone. But you know how you know someone can't drink or is a vegan…they tell you every two minutes.

Traditional Stifado doesn't have tomato and you either add cinnamon or cloves for beef, not both.
2 gloves and 2 bay leafs are enough, not 10, Greek food isn't spicy.

For people that can't consume alcohol: For me using the combination of grape juice and a little bit of balsamic vinegar replicates the flavor of using red wine in cooking extremely well. Just do not use too much grape juice because of the sugar in it, otherwise the dish can become a bit too sweet. I usually use about half or a third of the amount of wine it says in a recipe. For example if a recipe wants me to use 300ml red wine, I use 100ml-150ml grape juice and balsamic vinegar to taste (usually 1-3 tbsp).
You should have tempered the cinnamon and cloves first in some way before adding them like that to the stew. Perhaps this recipe is directed towards college students / beginners? Even so, it's a small but important step when using whole spices.
As far as I am concerned currants are the product of Beelzebub's bottom, apart from that great recipe.
Is it okay to fry with olive oil at a high heat?
Do you eat those huge shallots as well or did you remove them?
