The 0 – 400 degree chicken wing method is a simple method to cook somewhat smoky, but crispy chicken wings. This method is where you place wings on a pellet grill while it is off, set it to 400 and cook them. We add a few additional tricks to get crispy, evenly cooked wings in this video, and the result is a wing that is worth of being in your cooking arsenal!

Rack is on a baking sheet when you put it in cold. But baking sheet is gone when you temp at 30 minutes. Wouldn’t the baking sheet shield the wings from smoke penetration?

Honestly the best method I learned was from @goodazbbq.
Bind with mayo, seasoning with desired rub and some cornstarch, 400F for 50-60 mins depending on size.
Always a hit!
I thought when starting a pellet smoker u want the lid open until the fire catches/jet noise?
Try the Chinese Peking Duck trick. Pour boiling water over the wings first before air drying them in the refrigerator. The boiling water shrinks the skin up tight, making them even crispier!
Make sure you do not start your pellet smoker closed ppl wait for the start up before closing the lid!!

I didn't know you cooked wings to 200+. I would've guessed they'd be jerky by that point. Then again mine never get a crispy skin pulling them by 170.

I do this with bacon in the oven .Don't preheat just set to 400 for like 15 to 17 min and bacon on a baking tray or wire rack . When u don't preheat, the oven pushes itself to the max to try and hit that set temperature as quick as possible so it's starts up real hot

225 super smoke for 30 minutes, then crank to 450 for 20. Flash fry after. Perfect every time!
