Welcome to another episode of Cooking with Dave! Today, we’re making the Ultimate Keto Feast Salad, inspired by the iconic 1905 Salad from Columbia Restaurant. This salad is not only packed with incredible flavors but also keto-friendly and hearty enough to be a complete meal. Perfect for lunch, dinner, or meal prep!
Full Recipe:
Ingredients (Serves 4):
1 head iceberg lettuce, chopped
1 medium tomato, sliced into wedges
1/2 cup sugar-free ham or turkey, julienned
1/2 cup Swiss cheese, shredded
1/4 cup Spanish queen olives stuffed with pimentos, sliced
1/4 cup grated Parmesan cheese
Dressing:
1/2 cup olive oil
1/4 cup white wine vinegar
1 tablespoon fresh lemon juice
2 garlic cloves, minced
1 teaspoon Worcestershire sauce (ensure keto-friendly)
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Instructions:
Prepare the Dressing: In a medium bowl, whisk together olive oil, white wine vinegar, lemon juice, garlic, Worcestershire sauce, oregano, salt, and pepper until combined.
Assemble the Salad: In a large salad bowl, combine the iceberg lettuce, tomato wedges, ham, Swiss cheese, and sliced olives.
Add Parmesan Cheese: Sprinkle the grated Parmesan cheese over the top.
Toss and Serve: Drizzle the dressing over the salad and toss well to coat. Serve immediately and enjoy!

You talk too fast!
First time watching. You don’t know how to core iceberg lettuce. You don’t know what julienne means. You don’t have a sharp knife. If I wasn’t interest in this recipe I would have already stopped watching.
Queen refers to the size of the olives ! They are still green olives rather than cured (black ) olives. Julienne is long narrow strips of meat or veg. Yes you eat the center of lettuce! Caesar dressing is healthy if made with good olive oil and parmesan and fresh egg yolk or coddled egg, fresh lemon juice etc.. I’d double the meat and cheese. Olive oil 954 calories per half cup. Salad looks delicious. I’d probably put the dressing (including anchovies, which, by the way are in Caesar dressing) in my Nutribullet to mix- makes a nice emulsification.
Smashing the lettuce core on the counter is absolutely the best way to deal with it!
The Columbia Restaurant original restaurant is in Ybor City, Tampa, Florida. That's a branch restaurant. I don't understand what you've done with the lettuce. I'd recommend knowing how to handle food prior to showing a demonstration of it. Removing the core of a head of lettuce is in the top 10 first things to learn in a kitchen. (as is to julienne) Great job.
So I just found this channel, I love watching cooking videos. That salad looks nommy and not hard to make. I'd have added the olives, the pimento would have added a nice flavor too, but I'm a total olive fan.
I can’t remember when I bought iceberg lettuce. It is not a good nutritional lettuce . Think darker green lettuce. Love ham, turkey, cheese, nuts, and of course other veggies in my salads. Protein helps the staying power of salad as a meal.

Love Columbia (I have easy access to the one in Celebration) and love this salad. It is actually very keto-friendly and delicious.
You can eat tomatoes on keto, okay? Also that middle part of the lettuce you eat, that is a very healthy part of the head of lettuce, it is not like cabbage where you throw away the core. I am surprised you do not know that.
Add the olives. Leaving them out would have been missing a big flavor component, in my opinion.

Dude, no, no, no! WOW YOU DISTROYED THAT LETTUCE AND YOU NEEDED TO CORE IT BEFOR WASHING IT PLUS YOU GOT RID OF THE MIDDLE WHICH IS THE BEST PART IF YOU WOULD HAVE TAKEN OUT THE CORE!
That's about two servings for me. I love a BIG bowl of salad and that one looks yummy! I wouldn't use iceberg lettuce though. I'd use romaine lettuce.
Pull out the core of the lettuce… that way your greens won’t go brown as fast. The knife will make it go brown faster… also pulling the core out then you don’t have that hard icky lettuce in the middle…
I was taught in a restaurant that you never cut lettuce you tear it with your hands. Cutting it will bruise the lettuce and make it turn brown faster.
Put your wet lettuce in a towel and whip it around in a circle. All of the water will come out of it. Love your videos
If you have clean hands, you can toss the salad with your hands.
The cheese is as high cal as the oil.
Seriously! It's lettuce just chop it don't analyze it. If you don't want to chop buy bagged lettuce and make sure you wash it then spin dry.
