About 2 weeks ago I did an alteration of this cook:

What I did differently was I wrapped the pork belly around my Rotisserie bar for my Webber Searwood XL, smoked the whole belly wrapped with the Chimchury and served on tacos. It was divine.
I am 100% going to use your recipe next to do the same process with the Searwood XL and rotisserie.

On the honey, the cold doesn’t matter that much. Honey kristallises most around 15 C. Colder prevents kristals from forming. Heat melts the kristals again.
Whoever cleans your grills needs a raise. They always look brand new compared to mine.
