Here’s the recipe –
Blueberry cheesecake ice cream
Blueberry compote –
2 cups blueberries
Juice of 1/2 lemon
2-3 tbsp caster sugar
Biscuit swirl – 3 biscuits of choice (I have used marie)
1 tbsp sugar
1 tbsp melted butter
Ice cream base –
200 g condensed milk
1/4 cup + 2 tbsp cream cheese
1 cup chilled cream
Compote Biscuit swirl.
Note – Make sure to reserve 1/3 compote and biscuit mixture for the topping, and don’t completely mix in the compote and biscuits, just make swirls 🙂 You can do this with literally any other fruit too 🥰
